Herb Dumplings
Chicken Vegetable Soup with Herb Dumplings
Ingredients:
• 2 tablespoons olive oil
• 3⁄4 cup water
• 6 tablespoons butter
• 2 teaspoons salt
• 3⁄4 cup flour
• 3 eggs
• 1 teaspoon dried dill
• 1 teaspoon dried parsley • 1 teaspoon dried chives • Pinch of pepper
Soup Instructions: In large stock- pot, heat oil and butter; add onions and celery and cook for about four minutes. Add carrots, parsnips, and sweet potato
Herb Dumplings Instructions:
• 2 tablespoons butter
• 1⁄2 onion, finely chopped
• 4 celery ribs, finely chopped
• 4 carrots, cut into 1⁄2-inch pieces
• 2 parsnips, cut into 1⁄2-inch pieces
• 2 sweet potato, cut into 1⁄2-inch pieces • 2 teaspoons each onion and garlic
In large saucepan, bring water, butter, and salt to boil over medium heat. When butter has melted, remove from heat and stir in flour until thoroughly combined. Return pan to medium heat and stir until mixture pulls away from the sides of the pot. Scape dough into large bowl and add eggs, beating well until the batter is smooth. Fold in fresh herbs. Roll into 1⁄2-inch balls and cook as directed in the recipe for soup.
