PUMPKIN SOUP
Every year I am eager to start using the flavors of the season, apples, squash, pumpkin, etc. There is nothing like a trip to an apple orchard or farm stand and bringing home these delights. Now that said, roasting a pie-pumpkin to cook with is more time or effort than most of us has. Libby’s can pumpkin puree is highly rated by America’s Test Kitchens and helps make this soup an easy fix on a fall afternoon.
Pumpkin Soup:
• 1 1⁄2 teaspoons butter
• 2 tablespoons butter

In medium stock pot, melt butter; add onion, celery, and carrots and sauté until onions are translucent, about 6 minutes. (Note: add more butter and allow to melt if too dry.) Stir in flour to thicken, cook about 1-2 minutes; add broth and stir. Add pumpkin, seasonings, and brown sugar and cook until heated through. Add salt and pepper to taste. Puree soup with immersion blender or in small batches in blender filling only halfway, put the top on, and hold down with a towel and blend until smooth. Add cream and heat through – do NOT allow to boil. Serve with swirl of sour cream.
