BEEF STROGANOFF
Last month’s column was a tribute to my mom and ended with wishing
I had her stroganoff recipe. Well, I found a cookbook with the following inscription, “To Jeanne and Truman... Truman’s share will be in the results, Love Uncle Paul and Aunt Dorothy” and a stained page with a beef stro- ganoff recipe. I can only imagine this was the one she used and in honor of Mother’s Day and her May birthday, here it is.
• 1 1⁄2 pounds fillet of beef
• 2 tablespoons butter plus more as
• Pinch of celery salt
• Pinch of nutmeg
• 1⁄2 teaspoon paprika
• 2 teaspoons dried parsley • Salt and pepper to taste
• 1/3 cup sour cream, room temperature
• Cooked rice or cooked wide egg-noodles
Instructions:
Pound the beef with a mallet until
it is thin, then cut into strips about 1-inch wide. In a large frying pan, melt 2 tablespoons of butter; add meat, and sauté for about 5 minutes, turning so
it browns evenly. Remove beef from pan, and add additional butter as need- ed. Then add onions and mushrooms and sauté until they begin to brown. Season with onion and garlic powders, Worcestershire, and soy sauce. Add tomato paste and stir in beef broth and beef flavoring. Return beef to pan and season with remaining seasonings. Bring to a boil; reduce to a simmer until it begins to thicken. Add sour cream and heat through but do not boil. Serve with rice or noodles.

                                   Battle Buddies Mobility Transport is owned by Kevin Hedrington, a 100% eligible Veteran. They are in their second year of operation, having started the business in January 2022 and were fully operational in February 2022. They provided 8,398 transports the first year. Battle Buddies started with two vehicles and five employees and today have eight vehicles and 14 employees. They are a non-emergen- cy transport, focusing on wheelchair transportation. Employees receive training and certification in CPR and infection control. Their Facebook indicates the exemplary service they provide. One customer wrote, “I have road with you guys three times now. Your vehicles are spotless and very nice. Your drivers are respectful. I will continue to ride with your company.” Their rapid expansion and customer
