ENTERTAINING RECIPIES
It’s that time of year again when we celebrate the birth of Christ and enjoy time together with family and friends. Someone is always dropping by or you’re organizing a holiday get-together. And you need some quick and easy recipes for entertaining. First, you don’t have to make everything from scratch (though
I often don’t take my own advice). For the recipes below, keep these ingredients in your larder and you will always be ready for any impromptu occasion. Most importantly though, don’t forget to take some time and enjoy the true meaning of Christmas.
Classic Meatballs Ingredients:
• 1 15-oz. container of ricotta cheese
• 1 8-oz. package cream cheese, softened
• 1 1⁄4 cup powdered sugar (whisked to
break up lumps)
• 1 1⁄2 teaspoon vanilla
• 1 cup mini chocolate chips
Instructions:
In medium bowl, using a mixer, blend the ricotta and cream cheese together until smooth. Add powdered sugar and vanilla and continue to mix well. Stir in mini chocolate chips. Put into serving bowl and refrigerate until ready to use. Serve with Biscoff cookies or graham crackers.
Spinach Artichoke Bites Ingredients:
• One package of Friday’s Spinach
Artichoke Dip, thawed (found in freez-
er section)
• One package of mini phyllo cups (also
in freezer section)
• Sprinkle of Swiss cheese (or cheese of
choice)
Instructions:
Preheat oven to 350 degrees; line cookie sheet with parchment paper and set aside. Fill each phyllo cup with about a tablespoon dip, sprinkle with a little cheese and put onto baking sheet. Bake about 10-15 minutes until dip is hot and cheese has melted. Serve warm or room temperature. This recipe can be easily doubled.

Merry Mile
Fun In Marshall

The Calhoun County Fairgrounds will again this year be the site of the “Merry Mile.” The freshly designed and expand- ed display of marvelous Christmas lights will be available for drive through from 6-9pm, Wednesday through Sunday, through December 30, including Christmas Eve and Christmas Day. This display is meant to draw together all of Calhoun County.
The beauty of the lights is meant
to reflect the love in our hearts at this very special time of year. Some of the lights have been donated and some of them have been purchased. There has been a committee of volunteers at the fairgrounds who have put their visions together to bring about a display sure to delight. Also at the fairgrounds you will find the Floral Hall open and decorated on Friday and Saturday nights. Stop and get out and see the beauty.
Visit on December 1, 15, or 22 for
a chance to sit on Santa’s lap. Other special events with the light show
are; Carriage Rides with the Marshall Carriage company, to go through the lights making it even easier to hear
the music and a live Nativity Scene, December 7 and 8. On December 1 from 3-7pm the Floral Hall will be alive with

Since it’s beginning in the heart of
a young Marshall woman, Harmony Dawson in 2016, this program has ignit- ed as an annual event with community and Fair board support. The intention is to build a little each year, to start new cycles of events to go with the Merry Mile. If you have any ideas for contin- ued expansion please contact the Fair office or Harmony Dawson, at Marshall Chiropractic Life Center. This is an event for all of Calhoun County, there is always room for new ideas.
This event must be something you
put on your Christmas to do list. Let it become a time honored annual tradition. Prices for the Merry Mile are $10 per car and $20 per bus. As you tour the Merry Mile let it brighten the holiday child in you, providing an excitement that will carry you through the season.
