 makes an evening meal served with a salad or put it on a brunch buffet. This recipe serves about four, but it can be doubled for larger group.
Ham and Rice Casserole
Ingredients:
• 1⁄4 cup butter
• 1⁄4 cup flour
• 1 1⁄2 cups whole milk
• 1⁄2 cup mayonnaise
• 1⁄2 teaspoon salt
• A few grinds of pepper
• 1 teaspoon each onion and garlic
 powders
• 2 cups cooked, cubed ham
• 2 cups cooked rice *
• 1 small can sliced water chestnuts,
drained
• 1/3 cup shredded sharp cheddar
cheese
• 2 tablespoons drained, chopped
pimentos
• Slivered almonds
Instructions:
Preheat oven to 350 degrees; grease a 2-quart casserole dish with cover and set aside. In medium sauce- pan, melt butter and whisk in flour, stirring and cooking about 1 minute. Gradually stir in milk, stirring until thick. Whisk in salt and seasonings and stir in remaining ingredients except almonds. Pour into prepared casserole dish, cover with lid, and bake for about 30 minutes. Remove lid, top with slivered almonds, and continue to bake another 10 minutes or until almonds are lightly toasted.
 *Or use two packets (8.8 oz each) microwave rice pouches.
