Cornbread Dressing

 ic. These recipes are some ‘Grandma’s traditions’ so you still recreate the feast at your home.
Grandma’s Cornbread Dressing
Ingredients:
• 3 cups cornbread, crumbled (make 2 packages of Jif Cornbread mix and let cool)
• 3⁄4 teaspoon seasoned salt
• 1⁄2 teaspoon pepper
• 2 teaspoons poultry seasoning
• 2 eggs, well beaten
Instructions: Preheat oven to 350 degrees and grease a 1-quart casserole dish; set aside. In a large bowl, combine cornbread, broth, and butter; mix well and set aside. In skillet over medium heat, add oil and sauté onions and celery until softened, about 5 minutes; add to cornbread along with seasonings. Let stand about 15 min- utes and then stir in eggs. Pour mixture into prepared dish and bake uncovered for 45-55 minutes. Serves 6-8.

   Asparagus Bundles
Ingredients:
• One bunch thin asparagus spears, cleaned and trimmed to 6 inches
• 2 tablespoons olive oil
• Salt and pepper to taste
• 6-8 slices of bacon, halved (don’t use
thick cut bacon)
Instructions: Preheat oven to 400 de- grees. In a large bowl, combine aspara- gus, oil, salt, and pepper and mix gently with your hands. For each bundle, wrap 3-4 stalks with a piece of bacon and lay on an ungreased rimmed baking sheet. Bake uncovered for 15-18 minutes or until asparagus is tender and bacon is crisp. Serve warm or at room tempera- ture. Makes 4-6 servings.
