Fun With FoodBY JOANNA STELLOH PHELPSArtichoke SquaresFor some rea- son, I start thinking of brunch recipes about this time each year. Maybe it’s the upcoming Easter and Mother’s Day holidays. This reci- pe makes a fast andeasy side for ham or a great appetizer too. Use what you need and freeze the rest for another day.Artichoke & Sharp Cheddar SquaresIngredients:• 2 6-ounce jars artichoke hearts, drainedbut reserve the juice, then chop• 1⁄2 medium onion, finely chopped• 1/8 cup panko bread crumbs• 1/8 cup Italian seasoned bread crumbs• 1 1⁄2 cups sharp shredded cheddarcheese• 1⁄2 cup grated Parmesan cheese• 2 teaspoons dried parsley• 2 teaspoons each of onion and garlicpowders• 1/4 teaspoon dried oregano• 2-3 drops hot sauce (optional)• 1 teaspoon salt• Pinch of pepper or to taste• 4 eggs, beatenInstructions: Preheat oven to 325 degrees and grease a 13- by 9-inch casserole dish; set aside. In skillet, using reserved arti- choke juice, sauté the onion until onions are soft and juice has been absorbed. In large bowl, mix bread crumbs, cheeses, and seasonings; add beaten eggs. Stir in artichokes and cooked onions, stirring to combine. Pour into prepared casserole dish and bake at 325 degrees for 30 minutes or until lightly browned. Remove from oven and let cool 15 minutes before cutting into squares.
